Ingredients
  

  • 1.5 pounds fresh Brussels sprouts
  • 6 cloves garlic minced or pressed
  • 2 tablespoons olive oil extra virgin
  • 2 tablespoons fresh rosemary minced
  • salt to taste
  • pepper to taste
  • 0.25 cup pine nuts
  • 0.25 cup parmesan cheese freshly grated

Method
 

  1. Preheat oven to 400?F (205?C) and preheat a large-rimmed baking sheet.
  2. Trim the ends and remove any discolored outer leaves from the Brussels sprouts.
  3. Rinse and pat dry the Brussels sprouts.
  4. Cut sprouts in half and place in a large mixing bowl.
  5. Toss with garlic, olive oil, rosemary, salt, and pepper.
  6. Arrange cut side down on a large sheet pan and roast for about 15 minutes.
  7. Turn over and cook for another 15 minutes.
  8. Add pine nuts during the last 5 minutes of cooking time.
  9. Remove from oven, grate cheese over top, and serve immediately.
