Gingerbread Syrup
  • ? cup dark brown sugar
  • ? cup molasses
  • 2 cups water
  • 3 whole cinnamon sticks
  • 8 whole allspice berries
  • 6 whole cloves
  • 2 teaspoons fresh grated ginger
Gingerbread Espresso Martini
  • 2 ounces vodka
  • 2 ounces Irish cream liqueur
  • 1 ounce coffee liqueur
  • 1 ounce gingerbread syrup
  • 2 ounces espresso coffee cooled
  • gingerbread cookies for garnish (optional)

Method
 

Gingerbread Syrup Preparation
  1. In a medium saucepan whisk together dark brown sugar, molasses, and water. Bring to a boil, whisking occasionally until the sugar has dissolved.
  2. Add the cinnamon stick, allspice, clove, ginger, and a pinch of salt. Whisk to combine.
  3. Lower heat and simmer for 15-20 minutes, stirring occasionally. The mixture should be slightly thickened.
  4. If using whole spices, strain syrup through a fine mesh strainer. Let cool to room temperature then transfer to an airtight container or mason jar.
Cocktail Preparation
  1. In a cocktail shaker with ice, add vodka, Irish cream, coffee liqueur, gingerbread syrup, and cooled espresso coffee.
  2. Shake vigorously for 10 seconds.
  3. Pour into a martini glass, serve and enjoy.
