Ingredients
  

Dry Ingredients
  • 1 cup gluten-free rolled oats
  • 1 cup almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 1/2 cup chocolate chips optional
  • 1/4 cup walnuts chopped, optional

Method
 

Preparation
  1. Preheat the oven to 350?F (175?C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the gluten-free rolled oats, almond flour, baking soda, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in any optional add-ins like chocolate chips or walnuts.
Baking
  1. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
  3. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a chewier cookie, slightly underbake them and let them sit on the baking sheet for a few minutes before transferring to a wire rack.
