Ingredients
  

Vegetables
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
Dressing
  • 1 cup mayonnaise preferably homemade
  • 1/2 cup blue cheese crumbled
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded green cabbage, shredded carrots, and shredded red cabbage.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, crumbled blue cheese, apple cider vinegar, Dijon mustard, honey, salt, and black pepper until smooth.
Combine
  1. Pour the dressing over the cabbage mixture and toss until all the vegetables are well coated.
Chill and Serve
  1. Cover the coleslaw and refrigerate for at least 30 minutes before serving to allow flavors to meld.
