Ingredients
  

  • 2 pieces boneless, skinless chicken breasts
  • 2 cups broccoli florets (200g)
  • 2 tbsp olive oil
  • to taste salt
  • to taste black pepper
  • 1/2 cup Greek yogurt (120ml)
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • 1/4 tsp paprika
  • as needed cooked rice or quinoa (for serving)

Method
 

  1. Season chicken with salt, pepper, and 1 tbsp olive oil. Grill until fully cooked, then slice.
  2. Toss broccoli with remaining olive oil, salt, and pepper. Roast or grill until tender.
  3. Mix Greek yogurt, garlic, lemon juice, parsley, and paprika in a bowl.
  4. Serve sliced chicken and broccoli over rice or quinoa, drizzling with the creamy garlic sauce.
