Grilled Ranch Garlic Parmesan Chicken Skewers

Ingredients
  

  • 2 lbs chicken tenders (thighs or breast)
  • 2 tbsp olive oil
  • 1 stick butter
  • 8-10 cloves garlic (minced)
  • 1/2 cup parmesan (grated)
  • 1 tbsp hot sauce
  • 2 tsp red pepper flakes
  • 1/3 cup fresh parsley (minced)
  • 1.5 tbsp dry ranch seasoning
  • 1 tsp dried dill
  • 1/2 tsp onion powder
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper

Method
 

  1. Soak wooden skewers in water for at least 30 minutes.
  2. Combine chicken seasoning mixture in a small bowl and set aside. Cut chicken into 3" pieces, toss with olive oil and spices in a large bowl or ziptop bag until well coated.
  3. Pack chicken onto each skewer tightly with no space in between. Trim top of skewers if needed to fit in the air fryer.
  4. In a microwave-safe bowl, combine butter and garlic and heat until partially melted. Add red pepper flakes, hot sauce, seasonings, and parmesan. Whisk until combined.
  5. Scoop out 1/3 of the sauce for basting the par-cooked chicken; reserve the remaining sauce for later use.
  6. Cook 2-3 skewers in an air fryer at 400 degrees for 5 minutes. Remove, flip skewers, baste with sauce, and return to cook for an additional 2 minutes at 400 degrees.
  7. Flip skewers back, baste with more sauce, and cook for another 5-6 minutes or until internal temperature reaches 165 degrees. Total cook time is 12-14 minutes.
  8. Baste cooked skewers with reserved sauce and sprinkle with extra parmesan before serving.

Notes
