Ingredients
  

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup mayonnaise (58 g)
  • 1 tablespoon vegetable oil
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup unsalted butter, melted (1 stick / 113 g)
  • 1 tablespoon garlic, minced
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, minced
  • 2 tablespoons parmesan cheese, finely grated
  • wooden skewers, soaked in water for 30 minutes

Method
 

  1. In a large bowl, combine mayonnaise, oil, garlic powder, paprika, salt, and pepper. Add chicken. Toss to evenly coat.
  2. Working one skewer at a time, thread 4-5 chicken cubes onto each.
  3. Air fry at 400?F for 11-12 minutes, flipping halfway, or until the chicken has reached an internal temperature of 165?F. While the chicken is cooking, prepare the sauce.
  4. To a small saucepan over medium heat, add butter, garlic, and pepper. Once the butter has melted, remove from heat. Stir in the parmesan and parsley.
  5. Transfer the cooked skewers to a plate. Drizzle or brush with the sauce. Serve hot.
