Ingredients
  

  • 2 medium sweet potatoes peeled and diced
  • 1 tablespoon extra virgin olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon garlic powder
  • 2 teaspoons rosemary
  • 1 pound lean ground turkey
  • 1 medium yellow onion diced
  • 1 14.5 oz can vegetable broth
  • 1.75 cups whole milk
  • 1 cup basmati rice uncooked
  • 2 cups shredded cheddar cheese
  • 2 teaspoons chopped parsley for garnish

Method
 

  1. Preheat oven to 400?F. Peel and dice sweet potatoes into 1 inch cubes.
  2. Place potato chunks in a 9 x 13" casserole dish. Drizzle with olive oil and sprinkle with seasonings, then stir well to coat. Bake potato cubes for 30 minutes.
  3. Meanwhile, place a large skillet on medium-high heat and add ground turkey. Break apart with a spoon and stir until completely browned.
  4. Add diced onion to the browned turkey meat and saut? for 3-5 minutes until soft and translucent.
  5. Remove casserole dish from the oven after 30 minutes have passed. Add broth, milk, uncooked rice and saut?ed turkey/onion mixture. Stir well and bake uncovered for 15 minutes.
  6. After 15 minutes, cover casserole with shredded cheese. Return to the oven for about 10 more minutes.
  7. Allow casserole to rest and cool for 10-15 minutes. Add parsley flakes, plate and enjoy!
