Method
Prepare the Filling
- Heat the olive oil in a large pot over medium heat. Add the beef cubes and brown on all sides.
- Add the onions, garlic, and carrots, cooking until softened.
- Stir in the tomato paste, then pour in the Guinness and beef stock.
- Add thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 1.5 hours until the beef is tender.
Make the Pastry
- In a bowl, mix the flour and salt. Add the butter and rub in until the mixture resembles breadcrumbs.
- Add cold water gradually until the dough comes together. Wrap in cling film and chill for 30 minutes.
Assemble the Pie
- Preheat the oven to 200?C (400?F). Roll out the pastry and line a pie dish.
- Fill the pastry with the beef filling, then cover with more pastry, sealing the edges. Cut slits in the top for steam to escape.
- Brush with beaten egg and bake for 30-35 minutes until golden brown.
