Ingredients
  

Base Ingredients
  • 2 cups coconut milk full fat for creaminess
  • 1/2 cup strong brewed coffee cooled
  • 1/4 cup honey or maple syrup adjust sweetness to taste
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
Optional Mix-ins
  • 1/2 cup chocolate chips dark or semi-sweet
  • 1/4 cup chopped nuts such as almonds or walnuts

Method
 

Prepare the Base
  1. In a mixing bowl, combine coconut milk, brewed coffee, honey or maple syrup, vanilla extract, and salt. Whisk until smooth.
Chill the Mixture
  1. Cover the mixture and refrigerate for at least 2 hours or until thoroughly chilled.
Churn the Ice Cream
  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Add Mix-ins and Freeze
  1. If using, fold in chocolate chips and/or chopped nuts. Transfer the ice cream to a container and freeze for at least 2 hours to firm up.
Serve
  1. Scoop the ice cream into bowls and enjoy your healthy coffee ice cream!
