Method
Prepare the Base
- In a mixing bowl, combine coconut milk, brewed coffee, honey or maple syrup, vanilla extract, and salt. Whisk until smooth.
Chill the Mixture
- Cover the mixture and refrigerate for at least 2 hours or until thoroughly chilled.
Churn the Ice Cream
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Add Mix-ins and Freeze
- If using, fold in chocolate chips and/or chopped nuts. Transfer the ice cream to a container and freeze for at least 2 hours to firm up.
Serve
- Scoop the ice cream into bowls and enjoy your healthy coffee ice cream!
