Ingredients
  

Rice
  • 3 cups cooked rice preferably day-old for best texture
Vegetables
  • 1 cup peas and carrots frozen or fresh
  • 1 cup green onions sliced
  • 1 cup mushrooms sliced
Eggs
  • 2 large eggs beaten
Sauce
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger minced
  • 1 teaspoon garlic minced
Oil
  • 2 tablespoons vegetable oil for cooking

Method
 

Cooking the Eggs
  1. Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove from the wok and set aside.
Stir-Frying Vegetables
  1. In the same wok, add the remaining tablespoon of oil. Add the minced garlic and ginger, saut? for 30 seconds until fragrant.
  2. Add the peas, carrots, and mushrooms. Stir-fry for about 3-4 minutes until tender.
Combining Ingredients
  1. Add the cooked rice to the wok, breaking up any clumps. Stir well to combine with the vegetables.
  2. Pour in the soy sauce and sesame oil, mixing thoroughly. Add the scrambled eggs and sliced green onions, and stir until everything is heated through.
Serving
  1. Remove from heat and serve hot, garnished with additional green onions if desired.
