Ingredients
  

Rhubarb Filling
  • 2 cups rhubarb, chopped
  • 1 cup sugar adjust to taste
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
Crumble Topping
  • 1 cup oats
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted
  • 1/2 teaspoon cinnamon
Ice Cream Base
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

Prepare Rhubarb Filling
  1. In a saucepan, combine chopped rhubarb, sugar, lemon juice, and cornstarch. Cook over medium heat until rhubarb is tender and mixture thickens, about 10-15 minutes. Let cool.
Make Crumble Topping
  1. In a mixing bowl, combine oats, flour, brown sugar, melted butter, and cinnamon. Mix until crumbly. Spread evenly in a baking dish and bake at 350?F (175?C) for 15-20 minutes until golden brown. Let cool.
Prepare Ice Cream Base
  1. In a mixing bowl, whisk together heavy cream, whole milk, sugar, vanilla extract, and salt until sugar is dissolved.
Churn Ice Cream
  1. Pour the ice cream base into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Combine and Freeze
  1. Layer the churned ice cream, rhubarb filling, and crumble topping in a container. Swirl gently to combine. Freeze for at least 4 hours before serving.
