Ingredients
  

  • 1 can whole kernel corn 15 oz, drained
  • 1 can creamed corn 15 oz
  • 1 cup cornmeal
  • 1/2 cup sour cream
  • 1/4 cup melted butter
  • 1/4 cup honey plus 2 tablespoons for glaze
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Method
 

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch or 9×9-inch baking dish and set it aside.
  2. In a large mixing bowl, combine the drained corn, creamed corn, cornmeal, sour cream, melted butter, honey, milk, and eggs. Stir until smooth.
  3. Sprinkle in the baking powder and salt, and stir again to ensure everything is well combined.
  4. Pour the mixture into the prepared baking dish. Bake for 40–45 minutes, or until the top is golden and the center is set. A toothpick inserted should come out mostly clean.
  5. Once baked, drizzle the remaining 2 tablespoons of honey over the top. Return to the oven under the broiler for 1–2 minutes to caramelize the glaze slightly—watch closely to avoid burning.
  6. Let the casserole sit for 10 minutes before slicing. Serve warm.
