Ingredients
  

  • 3 pounds salmon cut in half
  • 1 14-ounce can pineapple tidbits or pineapple rings, cut into smaller pieces; reserve some pineapple for topping
  • 1/4 cup pineapple juice
  • 2 tablespoons melted unsalted butter or ghee
  • 2 tablespoons sesame oil
  • 1 tablespoon lemon juice
  • 1 tablespoon light brown sugar
  • 1 1/2 tablespoons honey
  • 1-2 cloves garlic minced
  • 1 small onion diced (optional)
  • 3-4 leaves fresh mint chopped, for garnish (or herb of choice)
  • 1 teaspoon sea salt
  • 1 teaspoon smoked paprika
  • 1/8 teaspoon white pepper
  • 2 tablespoons unsalted butter

Method
 

Cooking Steps
  1. Preheat oven to 400? F.
  2. Remove the salmon from packaging and pat dry with paper towels. Cut the salmon into two even pieces.
  3. Cover the bottom of a large sheet pan with aluminum foil or parchment paper.
  4. Place the pineapple tidbits or rings on top of the foil in rows of 2, and place the salmon on top of the pineapple.
  5. Chop remaining pineapple and add it to a bowl.
  6. Add melted butter, sesame oil, pineapple juice, lemon juice, honey, light brown sugar, minced garlic, smoked paprika, white pepper, and sea salt to the bowl. Mix well.
  7. Spread the marinade over the top of the salmon, ensuring it's fully covered. Allow to marinate for 15-30 minutes in the fridge.
  8. Place the sheet pan with the salmon in the oven on the center rack and bake for 25-30 minutes, or until an instant-read thermometer reads 145? F. To prevent drying, cover the salmon with foil during cooking.
  9. Remove the salmon from the oven and rest for 10 minutes.
  10. Garnish with fresh mint if desired and serve.
