Cooking Steps
- Preheat oven to 400? F.
- Remove the salmon from packaging and pat dry with paper towels. Cut the salmon into two even pieces.
- Cover the bottom of a large sheet pan with aluminum foil or parchment paper.
- Place the pineapple tidbits or rings on top of the foil in rows of 2, and place the salmon on top of the pineapple.
- Chop remaining pineapple and add it to a bowl.
- Add melted butter, sesame oil, pineapple juice, lemon juice, honey, light brown sugar, minced garlic, smoked paprika, white pepper, and sea salt to the bowl. Mix well.
- Spread the marinade over the top of the salmon, ensuring it's fully covered. Allow to marinate for 15-30 minutes in the fridge.
- Place the sheet pan with the salmon in the oven on the center rack and bake for 25-30 minutes, or until an instant-read thermometer reads 145? F. To prevent drying, cover the salmon with foil during cooking.
- Remove the salmon from the oven and rest for 10 minutes.
- Garnish with fresh mint if desired and serve.
