Ingredients
  

  • 1.5 cups all purpose flour
  • 2 tsp baking powder
  • 0.5 tsp kosher salt
  • 2 tsp cinnamon
  • 0.25 cups unsalted butter melted
  • 0.25 cups granulated sugar
  • 1 large egg
  • 0.5 tsp vanilla extract
  • 0.5 cups no-sugar added applesauce
  • 1.5 cups peeled and finely diced Honeycrisp apples
  • 2 cups powdered sugar
  • 0.33 cups apple cider or apple juice
  • 2 TBSP apple cider or apple juice

Method
 

  1. Preheat the oven to 400 F (200 C) and spray a baking sheet with cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
  3. In a large bowl, add the melted butter and whisk in the sugar followed by the egg. Stir in the vanilla and applesauce.
  4. Add the flour mixture to the wet ingredients and stir until well combined, then fold in the chopped apples.
  5. Scoop 1 TBSP of batter into mounds a few inches apart on the prepared baking sheet. Bake for 10 minutes, then remove from the oven and turn the broiler on high.
  6. In a small bowl, whisk together all glaze ingredients until thin.
  7. Brush some of the glaze over each fritter and let it drip down the sides. Return the fritters to the oven and broil for 2-4 minutes, watching carefully to avoid burning.
  8. Brush the remaining glaze evenly over the broiled fritters. Let set on the baking sheet until the glaze hardens, about 15 minutes.
