Ingredients
  

Brown Butter Cookie Base
  • 10 tablespoons unsalted butter must be browned
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 ? cups all-purpose flour
  • 1/4 teaspoon fine sea salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/3 cup pumpkin puree canned or homemade
  • 3/4 cup semisweet chocolate chips

Method
 

Baking Instructions
  1. Preheat oven to 350?F. Line baking sheets with parchment paper.
  2. In a medium stainless steel saut? pan over medium heat, melt the butter. Continue to cook until it becomes foamy and brown bits form at the bottom. Remove from heat and pour into a mixing bowl, keeping the brown bits.
  3. Add the granulated sugar and brown sugar to the hot butter and stir to combine. Set aside to cool to room temperature.
  4. In a small bowl, whisk together flour, salt, baking soda, cinnamon, ginger, nutmeg, and cloves.
  5. To the cooled butter mixture, add the egg yolk and vanilla, stirring to combine. Stir in pumpkin puree until smooth. Add the flour mixture in 3 batches, mixing well after each addition until a soft dough forms. Fold in the chocolate chips.
  6. Cover and chill the dough in the fridge for 30 minutes or until firm enough to scoop.
  7. Using a medium spring-loaded cookie scoop or spoon, roll the dough into 1 ?-tablespoon-sized balls and place on prepared baking sheets. Flatten slightly with the palm of your hand.
  8. Bake for 10-12 minutes or until set and edges are lightly browned.
  9. Let cool completely. Store at room temperature in an airtight container for up to 3 days.
