Preparation
- Preheat oven to 325?F degrees (350?F if using a metal loaf pan). Spray loaf pan with nonstick cooking spray.
- In a medium bowl, mix together all-purpose flour, baking soda, baking powder, salt, and pumpkin pie spice.
- In a separate mixing bowl, mix together brown sugar, canned pumpkin, eggs, vegetable oil, and water. Stir well to combine.
- Add the dry ingredients to the wet ingredients and stir just until blended. Be careful not to overmix.
- Pour batter into the loaf pan and bake for about 1 hour to 1 hour and 15 minutes. Check after the first 50 minutes with a toothpick to test for doneness.
Glazing
- While the bread is baking, prepare the glaze. In a small saucepan, whisk together butter, brown sugar, and milk. Bring to a boil for about 2 minutes, whisking constantly.
- When the bread is finished, poke holes in the top using a fork. Place a paper towel underneath the loaf pan to catch any glaze overflow.
- Slowly pour the warm glaze over the warm bread, aiming for the holes you poked.
- Press chopped pecans (if using) into the top of the bread. Allow to cool before slicing.
