Ingredients

For the Dough
  • 4 cups all-purpose flour a versatile base that gives your Italian sandwich bread structure and chew.
  • 2 teaspoons active dry yeast helps the dough rise beautifully; make sure it's fresh for best results.
  • 1.5 cups warm water activates the yeast; aim for around 110°F for optimal activation.
  • 2 tablespoons olive oil adds richness and flavor; you can substitute with melted butter if desired.
  • 1 tablespoon sugar feeds the yeast and enhances browning; you can use honey as a natural alternative.
  • 1.5 teaspoons salt balances flavors and strengthens the dough; never skip this essential ingredient!
For the Topping
  • 1 tablespoon cornmeal dust the baking surface to prevent sticking and to add a rustic texture.
  • 1 tablespoon sesame seeds sprinkle on top for extra crunch and flavor; poppy seeds are a great alternative!

Method

Making the Dough
  1. In a large mixing bowl, combine warm water, yeast, and sugar. Let it sit for about 5-10 minutes until bubbly and frothy—this is your yeast activation moment!
  2. Add flour, salt, and olive oil to the yeast mixture. Stir with a wooden spoon until it forms a shaggy dough that pulls away from the sides of the bowl.
  3. Transfer to a floured surface and knead for about 8-10 minutes. Aim for a smooth, elastic texture; it should spring back when poked gently.
  4. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm spot for about 1 hour or until doubled in size.
  5. Punch down the risen dough gently to release air. Shape it into a loaf by rolling tightly from one end to another—this creates beautiful layers!
  6. Place the shaped dough into a greased loaf pan. Cover again and let it rise for another 30-45 minutes until puffy and touching the sides of the pan.
  7. While the dough rises, preheat your oven to 375°F (190°C). This ensures an even bake for that perfect crust!
  8. Bake the loaf for about 25-30 minutes or until golden brown on top and sounds hollow when tapped on the bottom.
  9. Brush with melted butter right after baking for an extra rich flavor.
