Ingredients
  

Tea Base
  • 4 cups water
  • 4 teaspoons Kashmiri green tea leaves
  • 1 teaspoon baking soda helps in color transformation
Milk Mixture
  • 2 cups milk whole milk for creaminess
  • 1 cup heavy cream optional for richness
  • 2 tablespoons sugar adjust to taste
  • 1 teaspoon cardamom powder for flavor
Garnish
  • 2 tablespoons chopped pistachios for topping
  • 2 tablespoons chopped almonds for topping

Method
 

Prepare the Tea
  1. In a saucepan, bring water to a boil. Add Kashmiri green tea leaves and baking soda.
  2. Whisk vigorously for about 10-15 minutes until the mixture turns a deep red color.
  3. Reduce the heat and let it simmer for another 5 minutes.
Add Milk
  1. Slowly add the milk and heavy cream to the tea mixture, stirring continuously.
  2. Add sugar and cardamom powder, and continue to stir until well combined.
  3. Allow the chai to simmer for another 5-10 minutes, adjusting sweetness as desired.
Serve
  1. Strain the chai into serving cups.
  2. Garnish with chopped pistachios and almonds before serving.

Notes

For a more intense pink color, whisk the tea vigorously and ensure to use good quality Kashmiri green tea.
