Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 3/4 cup key lime juice freshly squeezed
  • 1 can sweetened condensed milk
  • 3 large egg yolks
Topping
  • 1 cup heavy whipping cream cold
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Crust
  1. Preheat the oven to 350?F (175?C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until lightly golden. Remove from oven and let cool.
Make the Filling
  1. In a mixing bowl, whisk together the key lime juice, sweetened condensed milk, and egg yolks until smooth.
  2. Pour the filling into the cooled crust and bake for an additional 10 minutes. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours.
Prepare the Topping
  1. In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Spread the whipped cream over the chilled pie before serving.
