Chia Pudding Base
  • 1 cup coconut milk full-fat or light
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
Topping
  • 2 medium kiwis peeled and diced
  • 1 tablespoon toasted coconut flakes for garnish

Method
 

Prepare Chia Pudding
  1. In a mixing bowl, whisk together the coconut milk, chia seeds, maple syrup, and vanilla extract until well combined.
  2. Cover the bowl and refrigerate for at least 4 hours or overnight until the mixture thickens.
Assemble and Serve
  1. Once the chia pudding has set, give it a good stir and divide it into serving glasses.
  2. Top each serving with diced kiwi and sprinkle with toasted coconut flakes.
  3. Serve immediately or keep refrigerated until ready to serve.
