Ingredients
  

Cake Base
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup milk
Kiwi Mousse
  • 3 large kiwis peeled and diced
  • 1 cup heavy cream chilled
  • 1/4 cup powdered sugar
  • 1 tbsp gelatin dissolved in 2 tbsp water
  • 1 tsp lemon juice

Method
 

Prepare the Cake Base
  1. Preheat the oven to 350?F (175?C). Grease and flour a cake pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, combine the flour and baking powder. Gradually add to the creamed mixture, alternating with milk.
  5. Pour the batter into the prepared cake pan and bake for 25 minutes or until a toothpick comes out clean.
  6. Allow the cake to cool completely before adding the mousse.
Make the Kiwi Mousse
  1. In a blender, puree the diced kiwis until smooth. Set aside.
  2. In a mixing bowl, whip the chilled heavy cream and powdered sugar until soft peaks form.
  3. Gently fold the kiwi puree and dissolved gelatin into the whipped cream. Add lemon juice and mix until combined.
  4. Spread the kiwi mousse over the cooled cake base evenly.
  5. Refrigerate for at least 2 hours to set before serving.
