Ingredients
  

Lamb
  • 2 pounds lamb shoulder cut into chunks
Marinade
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh oregano chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon lemon juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Vegetables
  • 2 medium potatoes peeled and cut into chunks
  • 2 medium carrots peeled and cut into chunks
  • 1 large onion sliced

Method
 

Preparation
  1. Preheat the oven to 325?F (160?C).
  2. In a mixing bowl, combine garlic, olive oil, oregano, thyme, lemon juice, salt, and pepper to create the marinade.
  3. Add the lamb chunks to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Cooking
  1. In a baking dish, place the marinated lamb, potatoes, carrots, and onion.
  2. Cover the dish tightly with parchment paper and then with aluminum foil.
  3. Bake in the preheated oven for 3 hours, until the lamb is tender and falling off the bone.
  4. Remove from the oven and let it rest for 10 minutes before serving.
