Ingredients
  

Crust
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
Filling
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice about 2 lemons
  • 2 tablespoons all-purpose flour
  • 1 teaspoon lemon zest fresh
  • 1/4 teaspoon baking powder

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). Grease the baking pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the flour and salt, mixing until combined. Press the mixture into the bottom of the prepared pan.
  4. Bake for 15 minutes or until lightly golden.
Prepare the Filling
  1. In a separate bowl, whisk together the sugar, eggs, lemon juice, flour, lemon zest, and baking powder until smooth.
  2. Pour the filling over the baked crust.
  3. Return to the oven and bake for an additional 20 minutes, or until the filling is set.
  4. Allow to cool completely before slicing into bars.
