Prepare the Limoncello
- Zest the lemons carefully, avoiding the white pith, and place the zest in a large jar.
- Pour the vodka over the lemon zest, seal the jar, and let it infuse in a cool, dark place for at least 7 days.
- After 7 days, combine the sugar and water in a saucepan over medium heat, stirring until the sugar dissolves completely.
- Let the syrup cool, then combine it with the lemon-infused vodka, mixing well.
- Strain the mixture through a fine strainer into a clean bottle, discarding the lemon zest.
- Seal the bottle and refrigerate for at least 24 hours before serving.
