Ingredients
  

Cauliflower Base
  • 1 head cauliflower cut into florets
  • 1 cup cream cheese softened
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup bacon cooked and crumbled
  • 1/4 cup green onions chopped, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Topping
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions chopped

Method
 

Prepare Cauliflower
  1. Preheat the oven to 350°F (175°C).
  2. In a pot, bring water to a boil and add cauliflower florets. Cook for about 5-7 minutes until tender.
  3. Drain the cauliflower and transfer to a mixing bowl.
Mix Ingredients
  1. Add cream cheese, sour cream, 1 cup of cheddar cheese, crumbled bacon, half of the green onions, garlic powder, salt, and pepper to the bowl with cauliflower.
  2. Mash the mixture until well combined but still slightly chunky.
Bake Casserole
  1. Transfer the cauliflower mixture to a baking dish and spread evenly.
  2. Sprinkle the remaining cheddar cheese on top.
  3. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  4. Remove from the oven and top with the remaining green onions before serving.
