Prepare Cauliflower
- Preheat the oven to 350°F (175°C).
- In a pot, bring water to a boil and add cauliflower florets. Cook for about 5-7 minutes until tender.
- Drain the cauliflower and transfer to a mixing bowl.
Mix Ingredients
- Add cream cheese, sour cream, 1 cup of cheddar cheese, crumbled bacon, half of the green onions, garlic powder, salt, and pepper to the bowl with cauliflower.
- Mash the mixture until well combined but still slightly chunky.
Bake Casserole
- Transfer the cauliflower mixture to a baking dish and spread evenly.
- Sprinkle the remaining cheddar cheese on top.
- Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
- Remove from the oven and top with the remaining green onions before serving.
