Ingredients
  

Potato Chips
  • 4 small Yukon gold potatoes
  • olive oil for frying
Onion Dip
  • ½ cup sour cream
  • ¼ cup cream cheese
  • 2 teaspoons onion powder
  • 2 Tablespoons chopped green onions

  • Mandoline or Sharp Knife
  • Electric Mixer
  • frying pan

Method
 

Preparing Potato Chips
  1. Use a mandoline or very sharp knife to cut the potatoes into ⅛ inch slices.
  2. Rinse well.
  3. Drain thoroughly.
  4. Pat dry.
  5. Heat ½ inch olive oil over medium heat until shimmering.
  6. Fry potato slices until they are just starting to brown, about 2-3 minutes per side.
  7. Drain well.
  8. Season with salt.
Making Onion Dip
  1. With an electric mixer, beat sour cream and cream cheese until smooth.
  2. Mix in onion powder and green onions.
