Ingredients
  

Butter Beans
  • 2 cups dried butter beans soaked overnight
  • 4 cups vegetable broth or chicken broth
  • 1 tablespoon olive oil for saut?ing
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Cooking the Butter Beans
  1. Drain and rinse the soaked butter beans. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and saut? until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.
  3. Add the soaked butter beans, vegetable broth, thyme, and smoked paprika. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until beans are tender.
Finishing the Dish
  1. Once the beans are tender, stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes.
  2. Serve hot, garnished with chopped parsley.
