  • 2 teaspoons kosher salt divided, plus more as needed
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion diced (about 1 1/2 cups)
  • 3 cloves garlic minced
  • 0.25 teaspoon freshly ground black pepper plus more as needed
  • 0.5 cup sun-dried tomatoes julienne or thinly sliced, drained if oil-packed (2 1/2 ounces)
  • 3 tablespoons tomato paste
  • 6 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 pinch red pepper flakes optional
  • 8 ounces dried medium pasta shells about 2 3/4 cups
  • 5 ounces baby spinach about 5 packed cups
  • 0.75 cup heavy cream
  • 0.5 ounces grated Parmesan cheese about 1/4 cup, plus more for serving

Cooking Instructions
  1. Cut the chicken into bite-sized pieces and season with 1 teaspoon of kosher salt.
  2. Melt the butter in a Dutch oven over medium-high heat. Cook the chicken in batches until browned and cooked through, about 4-6 minutes per batch. Transfer to a plate.
  3. Add the diced onion, minced garlic, black pepper, and the remaining salt to the pot. Cook until the onion is soft and translucent, about 3-4 minutes.
  4. Stir in the sun-dried tomatoes and tomato paste. Cook until the paste darkens slightly, about 2-3 minutes.
  5. Add the chicken broth, thyme, and red pepper flakes. Bring to a boil.
  6. Stir in the pasta and reduce heat to a simmer. Cook until the pasta is al dente, about 10-12 minutes.
  7. Return the chicken to the pot, adding any juices. Stir in the spinach, heavy cream, and Parmesan cheese. Cook until the spinach wilts, about 2 minutes. Adjust seasoning if needed.
