Ingredients
  

Salad Base
  • 4 cups mixed greens such as arugula, spinach, or romaine
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion thinly sliced
  • 1 cup kalamata olives pitted and halved
  • 1 cup feta cheese crumbled
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • 1 clove garlic minced
  • salt salt to taste
  • pepper black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, red onion, kalamata olives, and feta cheese.
  2. In a separate bowl, whisk together the olive oil, lemon juice, dried oregano, minced garlic, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or chill in the refrigerator for 30 minutes to allow flavors to meld.
