Ingredients
  

Tacos
  • 1 lb Ground Beef or chicken
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 8 taco shells Taco Shells
  • 1 cup Shredded Lettuce
  • 1 cup Diced Tomatoes
  • 1 cup Shredded Cheese cheddar or Mexican blend
  • 1 cup Sour Cream
Enchiladas
  • 2 cups Shredded Chicken
  • 8 corn tortillas Corn Tortillas
  • 2 cups Enchilada Sauce
  • 1 cup Shredded Cheese Mexican blend
  • 1 cup Chopped Onions optional
Guacamole
  • 2 large Avocados
  • 1 medium Tomato diced
  • 1 small Onion finely chopped
  • 1 lime Lime Juice freshly squeezed
  • 1 tsp Salt
  • 1 tsp Cilantro chopped
Salsa
  • 4 medium Tomatoes diced
  • 1 small Onion finely chopped
  • 1 jalape?o Jalape?o seeded and minced
  • 1 lime Lime Juice freshly squeezed
  • 1 tsp Salt
  • 1 tsp Cilantro chopped

Method
 

Tacos Preparation
  1. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add chili powder and cumin, stirring to combine. Cook for an additional 5 minutes.
  3. Fill taco shells with beef mixture and top with lettuce, tomatoes, cheese, and sour cream.
Enchiladas Preparation
  1. Preheat the oven to 350?F (175?C).
  2. Soften corn tortillas in a skillet or microwave.
  3. Fill each tortilla with shredded chicken, roll them up, and place in a baking dish.
  4. Pour enchilada sauce over the top and sprinkle with cheese and onions.
  5. Bake for 20-25 minutes until heated through and cheese is melted.
Guacamole Preparation
  1. In a bowl, mash the avocados with lime juice.
  2. Mix in diced tomatoes, onions, salt, and cilantro.
  3. Serve immediately with tortilla chips.
Salsa Preparation
  1. In a bowl, combine diced tomatoes, onion, jalape?o, lime juice, salt, and cilantro.
  2. Mix well and let sit for 15 minutes to allow flavors to meld.
  3. Serve with tortilla chips or as a topping for tacos.
