Ingredients
  

Brussels Sprouts
  • 1 pound Brussels sprouts trimmed and halved
Corn Mixture
  • 1 cup corn kernels fresh or frozen
  • 1 tablespoon mayonnaise for creaminess
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder for spice
  • 1/2 cup cotija cheese crumbled
  • 2 tablespoons cilantro chopped
Seasoning
  • 2 tablespoons olive oil for roasting
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare Brussels Sprouts
  1. Preheat the oven to 400?F (200?C).
  2. In a mixing bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper.
  3. Spread the Brussels sprouts on a baking sheet in a single layer.
  4. Roast in the preheated oven for 20-25 minutes, or until golden brown and tender.
Prepare Corn Mixture
  1. In a separate bowl, combine corn kernels, mayonnaise, lime juice, chili powder, cotija cheese, and cilantro.
  2. Mix well until all ingredients are combined.
Combine and Serve
  1. Once the Brussels sprouts are roasted, remove them from the oven and let cool slightly.
  2. Top the roasted Brussels sprouts with the corn mixture.
  3. Serve warm and enjoy!
