Ingredients
  

Pasta and Corn
  • 8 oz cooked pasta elbow or rotini works well
  • 2 cups fresh corn kernels can use frozen if fresh is unavailable
  • 1 cup cherry tomatoes halved
  • 1 cup red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
Dressing
  • 1/3 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Toppings
  • 1/4 cup crumbled feta cheese
  • 1 lime lime wedges for serving

Method
 

Prepare the Pasta and Corn
  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Grill or saut? the corn kernels until slightly charred, about 5-7 minutes. Set aside to cool.
Make the Dressing
  1. In a mixing bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, cumin, garlic powder, salt, and pepper until smooth.
Combine Ingredients
  1. In a large bowl, combine cooked pasta, grilled corn, cherry tomatoes, red bell pepper, red onion, and cilantro.
  2. Pour the dressing over the pasta mixture and toss until well coated.
Serve
  1. Top with crumbled feta cheese and serve with lime wedges on the side.
