Mini Banana Pudding Tres Leches

Ingredients
  

Cake Base
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
Tres Leches Mixture
  • 1/2 cup sweetened condensed milk
  • 1/2 cup evaporated milk
  • 1/2 cup whole milk
Banana Pudding Layer
  • 2 ripe bananas sliced
  • 1 box instant vanilla pudding mix
  • 2 cups milk for pudding
  • 1 cup whipped cream for topping

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x9 inch baking dish.
  2. In a mixing bowl, whisk together flour, baking powder, and sugar.
  3. In another bowl, cream the butter and add eggs, vanilla, and milk. Mix well.
  4. Combine the wet and dry ingredients, and pour into the prepared baking dish.
  5. Bake for 20 minutes or until a toothpick comes out clean. Let cool.
Make the Tres Leches Mixture
  1. In a bowl, combine sweetened condensed milk, evaporated milk, and whole milk.
  2. Once the cake has cooled, poke holes all over the top and pour the tres leches mixture over it. Let it soak for at least 30 minutes.
Prepare the Banana Pudding Layer
  1. In a bowl, whisk together the instant vanilla pudding mix and 2 cups of milk until thickened.
  2. Layer sliced bananas over the soaked cake, then spread the pudding on top.
  3. Top with whipped cream and additional banana slices if desired.
