Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter melted
Filling
  • 8 ounces cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon dried lavender culinary grade
  • 1 cup blackberries fresh or frozen
  • 2 large eggs
Topping
  • 1/2 cup blackberries for garnish
  • 1 tablespoon honey optional

Method
 

Prepare the Crust
  1. Preheat the oven to 325?F (160?C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture evenly into the bottom of a muffin tin to form the crusts.
  3. Bake for 10 minutes, then remove from the oven and let cool.
Make the Filling
  1. In a mixing bowl, beat the softened cream cheese until smooth using an electric mixer.
  2. Add sour cream, sugar, vanilla extract, and dried lavender. Mix until well combined.
  3. Add eggs one at a time, mixing well after each addition. Gently fold in the blackberries.
Bake the Cheesecakes
  1. Pour the filling over the cooled crusts in the muffin tin.
  2. Bake for 20 minutes or until the centers are set. Remove from the oven and let cool.
  3. Refrigerate for at least 2 hours before serving.
Serve
  1. Top each mini cheesecake with fresh blackberries and a drizzle of honey if desired.

Notes
