Ingredients
  

Cookie Base
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
Topping
  • 1 cup pineapple rings canned or fresh
  • 1/4 cup brown sugar packed
  • 4 pieces maraschino cherries

Method
 

Prepare the Cookie Base
  1. Preheat the oven to 350?F (175?C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Assemble and Bake
  1. Spoon the cookie dough onto the prepared baking sheet, forming small rounds.
  2. In the center of each cookie, place a pineapple ring and sprinkle with brown sugar.
  3. Top each pineapple with a maraschino cherry.
  4. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  5. Allow to cool slightly before transferring to a wire rack to cool completely.
