  • 1 package premade pie crust or homemade if preferred
Filling Ingredients
  • 1 can pumpkin puree 15 oz.
  • 4 large eggs room temperature
  • 2 cups granulated sugar
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
Frosting Ingredients
  • 8 oz cream cheese room temperature
  • 1/2 cup unsalted butter room temperature
  • 1 tsp vanilla extract
  • 3 cups powdered sugar sifted
Topping Ingredients
  • 1 cup pecan halves or coarsely chopped, toasted

Method
 

Preparation
  1. Preheat the oven to 350?F.
  2. In a bowl, combine the pumpkin puree, granulated sugar, and eggs. Beat on low speed until blended.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, salt, and nutmeg.
  4. Gradually add the dry ingredients to the pumpkin mixture, beating until smooth.
  5. Fill the prepared pie crusts generously with the pumpkin filling.
Baking
  1. Bake in the preheated oven until a wooden pick inserted in the center comes out clean, about 20 to 25 minutes.
  2. Cool completely in the pan on a wire rack.
Frosting
  1. In a mixing bowl, combine cream cheese, butter, and vanilla. Beat until smooth.
  2. Gradually add powdered sugar, beating until light and fluffy.
  3. Frost the cooled pumpkin pies and garnish with toasted pecans.
  4. Cut into squares, about 2 x 2 inches each.
