Prepare the Marinade
- In a mixing bowl, whisk together miso paste, sugar, sake, and mirin until smooth.
Marinate the Fish
- Place the black cod fillets in a baking dish and cover with the miso marinade. Ensure the fish is well coated.
- Cover the dish with plastic wrap and refrigerate for at least 24 hours, up to 48 hours for deeper flavor.
Cook the Fish
- Preheat the oven to 400°F (200°C).
- Remove the fish from the marinade and place it on a baking sheet lined with parchment paper.
- Bake for 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.
