Ingredients
  

Marinade
  • 1/2 cup miso paste white or yellow
  • 1/4 cup sugar brown sugar preferred
  • 1/4 cup sake
  • 1/4 cup mirin
Fish
  • 4 fillets black cod about 6 ounces each

Method
 

Prepare the Marinade
  1. In a mixing bowl, whisk together miso paste, sugar, sake, and mirin until smooth.
Marinate the Fish
  1. Place the black cod fillets in a baking dish and cover with the miso marinade. Ensure the fish is well coated.
  2. Cover the dish with plastic wrap and refrigerate for at least 24 hours, up to 48 hours for deeper flavor.
Cook the Fish
  1. Preheat the oven to 400°F (200°C).
  2. Remove the fish from the marinade and place it on a baking sheet lined with parchment paper.
  3. Bake for 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.
