Ingredients
  

Marinade
  • 1/4 cup miso paste white or yellow
  • 1/4 cup sugar brown sugar preferred
  • 2 tablespoons sake
  • 2 tablespoons mirin
Fish
  • 4 fillets black cod skin-on preferred

Method
 

Prepare the Marinade
  1. In a mixing bowl, whisk together miso paste, sugar, sake, and mirin until smooth.
Marinate the Fish
  1. Place black cod fillets in a baking dish and pour the marinade over them, ensuring they are well coated.
  2. Cover and refrigerate for at least 24 hours, up to 48 hours for best flavor.
Cook the Fish
  1. Preheat the oven to 400°F (200°C).
  2. Remove the fish from the marinade and place on a baking sheet lined with parchment paper.
  3. Bake for 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.
