  • 7 ? oz pumpkin puree

  • 1 ? tablespoons pumpkin spice mix
  • 3 oz Philadelphia cream cheese
  • ? tablespoon granulated sugar
  • ? teaspoon vanilla extract

Method
 

  1. Preheat oven to 350?F. Line 12 standard muffin tins with liners.
  2. In a medium bowl, beat cream cheese with sugar until smooth and then add vanilla.
  3. Combine flour, baking soda, baking powder, salt, and pumpkin spice in a medium bowl. Whisk to incorporate and set aside.
  4. Whisk together light brown sugar, sugar, oil, and eggs. Whisk in pumpkin puree.
  5. Fold in the dry ingredients until just combined.
  6. Scoop muffin batter between the prepared liners. Using a small cookie scoop, scoop cream cheese mixture into the center of each and press down slightly.
  7. Bake in the preheated oven for about 20 minutes or until a toothpick comes out with a few clinging crumbs or they spring back lightly to the touch.
