Ingredients
  

Base Sauce
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk whole milk preferred
  • 1 pinch salt
  • 1 pinch white pepper
  • 1 pinch nutmeg freshly grated
Cheese
  • 1 cup grated Gruy?re cheese
  • 1/2 cup grated Parmesan cheese

Method
 

Prepare the B?chamel
  1. In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes to form a roux.
  2. Gradually add the milk while whisking to avoid lumps. Continue to cook and stir until the sauce thickens, about 5-7 minutes.
  3. Season with salt, white pepper, and nutmeg.
Add Cheese
  1. Remove the saucepan from heat and stir in the Gruy?re and Parmesan cheeses until melted and smooth.
  2. Adjust seasoning if necessary and serve immediately or keep warm until ready to use.
