Mushroom & Wild Rice Pilaf

Ingredients
  

Rice and Vegetables
  • 1 cup wild rice rinsed
  • 2 cups vegetable broth or water
  • 1 tablespoon olive oil for saut?ing
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 8 ounces mushrooms sliced
  • 1 teaspoon thyme dried
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/4 cup parsley chopped, for garnish

Method
 

Cooking the Pilaf
  1. In a large saucepan, heat olive oil over medium heat. Add chopped onion and saut? until translucent, about 5 minutes.
  2. Add minced garlic and sliced mushrooms to the pan. Cook until mushrooms are browned and tender, about 8-10 minutes.
  3. Stir in the wild rice, thyme, salt, and black pepper. Cook for 1-2 minutes to toast the rice slightly.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 40-45 minutes, or until the rice is tender and the liquid is absorbed.
  5. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and stir in chopped parsley before serving.
