Method
- Place Biscoff Cookies in a food processor and blend until very fine crumbs.
- Add the Biscoff Spread and pulse until it forms a thick paste.
- Transfer mixture into a bowl and refrigerate for 10 to 15 minutes.
- Roll the dough into 1-inch balls and place on a baking tray lined with parchment paper. Refrigerate until firm, about 1 hour.
- For the chocolate coating, melt milk chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth. Cool for 5 minutes.
- Dip each Biscoff ball into the melted milk chocolate using a fork and place back on the tray.
- Drizzle with more melted milk chocolate.
- Allow to set at room temperature or in the fridge before serving.

Notes
You can customize these truffles by using dark or white chocolate instead of milk chocolate, or adding a pinch of sea salt for a sweet-and-salty contrast. Roll them in crushed nuts or coconut for added texture.
