Ingredients
  

Muffin Batter
  • 1 cup all-purpose flour
  • 1 cup rhubarb, chopped fresh or frozen
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
Crumbly Topping
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar packed
  • 1/4 cup butter, softened
  • 1/2 teaspoon cinnamon

Method
 

Prepare Muffin Batter
  1. Preheat the oven to 350?F (175?C) and grease a muffin tin.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the egg, milk, vegetable oil, and vanilla extract.
  4. Combine the wet and dry ingredients, then gently fold in the chopped rhubarb.
Make Crumbly Topping
  1. In a separate bowl, mix the flour, brown sugar, and cinnamon.
  2. Add the softened butter and mix until crumbly.
Bake Muffins
  1. Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  2. Sprinkle the crumbly topping over each muffin.
  3. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  4. Allow to cool for a few minutes before transferring to a wire rack.
