Cooking Steps
- In a medium mixing bowl, whisk together 1 tablespoon of soy sauce and cornstarch. Add the turkey and stir to coat with the sauce. Let marinate for 10 minutes.
- Chop the mushrooms finely and mince the garlic. Thinly slice the green onions.
- Heat a wok or large saut? pan over high heat. Add the oil, then add the marinated turkey and cook until fully cooked through, about 5 minutes.
- Add the green onions and mushrooms. Cook until the mushrooms soften, about 2 additional minutes.
- Reduce heat to medium-low. Add the broccoli coleslaw, carrots, ginger, and garlic. Stir-fry for 2 minutes until vegetables are softened.
- Add rice vinegar, chili paste, sesame oil, and black pepper, then stir to combine. Cook for 1 additional minute. Taste and adjust seasoning if necessary. Serve hot.
