Ingredients
  

Lamb
  • 1 whole leg of lamb about 4-5 pounds
Seasoning
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Optional
  • 1 cup red wine for deglazing
  • 2 cups vegetables such as carrots and potatoes, for roasting

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix together minced garlic, chopped rosemary, thyme, olive oil, salt, and pepper.
  3. Rub the mixture all over the leg of lamb, ensuring it is well coated.
Roasting
  1. Place the leg of lamb in a roasting pan. If using, add vegetables around the lamb.
  2. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  3. Remove from the oven and let it rest for 15-20 minutes before slicing.
Serving
  1. Slice the lamb and serve with the roasted vegetables. Optionally, deglaze the pan with red wine to make a sauce.
