Ingredients
  

Cake
  • 1 box white cake mix plus ingredients required on the box
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
Jell-O Topping
  • 1 box red Jell-O
  • 1 box blue Jell-O
  • 2 cups boiling water for dissolving Jell-O
Frosting
  • 1 container whipped topping thawed
  • 1 cup cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a mixing bowl, combine the cake mix, water, vegetable oil, and eggs. Mix until well combined.
  3. Pour the batter into the prepared baking pan and bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  4. Allow the cake to cool for 10 minutes, then poke holes all over the top using a toothpick.
Add Jell-O
  1. In a separate bowl, dissolve the red Jell-O in 1 cup of boiling water. Pour over the cake, allowing it to seep into the holes.
  2. Repeat the process with the blue Jell-O. Allow the cake to cool completely in the refrigerator for at least 2 hours.
Frost the Cake
  1. In a mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until well combined.
  2. Fold in the whipped topping until smooth and creamy.
  3. Spread the frosting over the cooled cake. Decorate with additional berries if desired.
