Ingredients
  

Oyster Stew Base
  • 2 cups milk whole milk preferred
  • 1 cup heavy cream
  • 1 cup oysters fresh, shucked
  • 1 cup butter unsalted
  • 1 cup celery finely chopped
  • 1 cup onion finely chopped
  • 1 cup green bell pepper finely chopped
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce to taste
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon parsley chopped, for garnish

Method
 

Prepare the Base
  1. In a large pot, melt the butter over medium heat. Add the chopped celery, onion, and green bell pepper, and saut? until soft, about 5 minutes.
  2. Stir in the Worcestershire sauce, hot sauce, salt, and black pepper, and cook for another minute.
  3. Pour in the milk and heavy cream, and bring to a gentle simmer.
Add Oysters
  1. Add the oysters to the pot and cook for about 5-7 minutes, until the edges of the oysters curl and they are heated through.
  2. Taste and adjust seasoning if necessary.
Serve
  1. Ladle the oyster stew into bowls and garnish with chopped parsley. Serve hot.
