Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
Pineapple
  • 1 cup fresh pineapple chunks or canned, drained
Sauce
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
Vegetables
  • 1 bell pepper sliced any color
  • 1 cup snap peas
  • 2 cloves garlic minced
  • 1 tablespoon ginger minced
Garnish
  • 2 green onions sliced for garnish
  • 1 tablespoon sesame seeds for garnish

Method
 

Cook Chicken
  1. Heat a skillet over medium-high heat and add a little oil. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
Add Vegetables
  1. Add the bell pepper, snap peas, garlic, and ginger to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
Make Sauce
  1. In a bowl, mix together the soy sauce, honey, rice vinegar, and cornstarch mixture. Pour the sauce over the chicken and vegetables.
Add Pineapple
  1. Add the pineapple chunks to the skillet and stir everything together. Cook for an additional 2-3 minutes until the sauce thickens.
Serve
  1. Serve hot, garnished with sliced green onions and sesame seeds.
