  • 4 pieces boneless, skinless chicken breasts
  • 1 can pineapple chunks in juice, drained
  • 1 cup teriyaki sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 cup bell pepper sliced
  • 1 cup onion sliced
  • 2 tablespoons cornstarch for thickening
  • 2 tablespoons water for cornstarch slurry

Method
 

Preparation
  1. Place the chicken breasts in the crockpot.
  2. Add the drained pineapple chunks, teriyaki sauce, soy sauce, garlic powder, ginger powder, bell pepper, and onion on top of the chicken.
  3. Cover and cook on low for 4 hours or on high for 2 hours.
Thickening the Sauce
  1. In a small bowl, mix the cornstarch with water to create a slurry.
  2. After cooking, stir in the cornstarch slurry into the crockpot and cook on high for an additional 15 minutes until the sauce thickens.
Serving
  1. Serve the pineapple chicken over rice or noodles, garnished with green onions if desired.
